VEGAN GLUTEN-FREE QUINOA FLAKE PORRIDGE

So , I know most of you probably never have tasted a QUINOA FLAKE porridge … Let me tell you – it is much yummier than oats & buckwheat ! It is even better because the quinoa has like 13g protein per 100g , it is low glycemic which means people with diabetes can eat it and it won’t effect their blood sugar as much. It has tons of vitamins , minerals and essencial amino-acid , so it is basically really really good for you ! It costs a bit much than oats but it is worth trying it ! Believe me , you will love it ! Take it from someone who never has liked any kind of porridge ! It is amazing ! Here I give you basic directions for making 1 serving of quinoa porridge … !

BASIC QUINOA FLAKE PORRIDGE
(1 serving)

50g quinoa flakes
200ml non-diary milk ( or diary if you want – your choice)
1 small banana *optional (as a sweetener)

Put the ingredients in a small saucepan , turn the heat up and wait until it starts boiling.When it begins to boil lower the heat to the lowest setting and let it cook for 1-2 minutes. Stir from time to time.
Cut the banana to small pieces and mash well. Add to the mixture in the saucepan and stir well. In about 2-3 minutes should be ready. If it is too thick , you could add more milk or water. When its ready , pour into a bowl and add your toppings. 

If you wanna make it chocolate one just add 1 tbsp raw cocoa powder or 1tbsp carob powder for a carob porridge. For vanilla one just add some vanilla. Easy peasy and super yummy !

VEGAN BLUEBERRY LEMON PANCAKES

BLUEBERRY LEMON PANCAKES

(1 serving)

1 golden flaxseed egg (make sure its around 50g when ready)
50ml non-diary milk ( I used ISOLA BIO Kamut Drink)
5ml CLEARSPRING organic sunflower oil
10ml TERRASANA maple syrup

35g wholegrain spelt flour HAMMER MUHLE
5g baobab powder
7g LINWOODS flaxseed mix with almonds , brazil nuts , walnuts & co-enzyme q10
1g dried lemon peel
2-3g baking soda DOVES FARM

65g fresh blueberries (for inside the pancakes plus decoration)
10-15ml TERRASANA maple syrup (for topping)
1tbsp plain coconut yogurt

First make the golden flaxseed egg and leave aside for about 10-15 minutes.
Mix the dry ingredients in a bowl and in another mix the wet ingredients.Then slowly start adding the dry ones to the wet ones while whisking. Pre-heat the pan to a medium temperature and pour a spoon and a half on to the pan.
Place a few blueberries in the pancake while cooking it. When bubbles start showing & the edges start getting dried up a but flip the pancake and leave cooking for about a minute or so.
I leave mine for about 45 seconds and i get them off the pan. Repeat until u run out of pancake mixture. Then pile up high and top with a little coconut yogurt or soy yogurt – each of those will do nicely, some fresh blueberries and pour some maple syrup on top. Then all you gotta do is ENJOY !

The recipe will work very well with hen egg & non-diary milk too ! I tried it both ways. The vegan ones turn out really thick if you leave the mixture aside too long. Please do take this in consideration when making the pancakes. The quality of the used products counts as well , so make sure your ingredients are as fresh as possible !  And one more thing – check out my instagram page. VEGAN CHOCOLATE PUDDING

(1 serving)

20g chia seeds
25g maple / agave syrup
125ml non-diary milk
10g raw cocoa powder

Put all the ingredients in a jar. Shake well and place in the fridge. In about 20 minutes shake again and leave in the fridge overnight! In the morning you can put some coconut yogurt or soy yogurt on top , some fruits , nuts … Whatever you want !

VEGAN LEMON PANCAKES WITH COCONUT CREAM
(1 serving)

1 golden flax seed egg (1tbsp ground golden flax seed + 3 tbsp water)
50gr flour (i used whole grain spelt flour cuz it was the one i had at the ktichen)
1/4 tsp baking powder
100ml cup non-diary milk /i used unsweetened rice vanilla milk/
15gr LINWOODS flaxseed , cacao & berries mix
20gr agave syrup
10g baobab powder
1g dried lemon peel
4-5 fresh strawberries *for topping
1 1/2 tbsp nutiva coconut manna *for topping
coconut oil *for the cooking

PREPARATION 

First make the flaxseed  egg and set it aside for about 20 minutes.
Meanwhile mix the dry ingredients for the pancakes. When the flaxseed egg is ready , mix with milk and stir well.
Then slowly start adding the wet ingredients to the dry ingredients.
Mix well until everything is combined and the consistency is similar to the one of a cake mixture.
Pre-heat the pan to a medium temperature and put a little coconut oil on it. Pour 1 1/2 spoon of the pancake mixture into the center of the pan. Spread it out slightly with a spoon forming a small pancake shape.
Let it cook until bubbles start forming on the top , then flip it over and cook for another minute or so. When the pancakes are ready top them with the toppings and eat while still hot !

1 small banana
1/2 green apple
1/4 avocado
1 cup kamut milk
1/4 tsp wheat grass
1/4 tsp kale powder
1/2 juiced lemon (to keep it green and for more vitamin C)
1 tsp maca root powder
1 tbsp baobab powder 
2 tbsp agave / maple syrup 

Put all ingredients in a blender , process until smooth. Top with whatever you like. I used hemp hearts and raw coconut chips !

2 kiwi fruits

1 tbsp hemp protein
1 tbsp baobab powder
1/2 tbsp maca root powder
1 tbsp lucuma powder
1/2 tbsp chia seeds
1 tbsp LINWOODS milled flaxseed , almonds , brazil nuts , walnuts , co-enzyme Q10

for topping 
pecans , strawberries , godji berry , hemp seeds , coconut chips …

Put all ingredients in a blender and process until smooth. Pour in abowl or a glass and top with whatever you like. I used pecans , strawberry , godji berry , hemp seeds , coconut chips … !

1 cup fresh or frozen strawberries
1/3 cup kamut milk (ISOLA BIO)
1 1/2 tbsp godji berry
1 tbsp baobab powder
1 tsp maca root powder
1/2 tsp camu camu powder
1 tbsp LINWOODS milled flax seed , almonds , brazil nuts , walnuts & co-enzyme Q10
1/2 tbsp agave / maple syrup (BIONA) *optional

Put all ingredients in a blender and process until smooth. Then top the smoothie with whatever you like ! I used raw coconut chips and a little more godji berry.

50g oats
125ml non-diary milk
1/2 medium sized pear
2 tbsp LINWOODS milled flaxseed , almonds , brazil nuts , walnuts & co-enzyme Q10
1/2 small banana
1 tsp maca root powder

a few almonds
coconut chips
1/2 small banana – slices
godji berry

PREPARATION 

This is half-oatmeal half-smoothie bowl. Put the ingredients from the 1st paragraph in a blender and process until smooth. The pear & the banana are the sweeteners for this oatmeal / smoothie bowl. Leave aside for about 20-25 minutes until it thickens , then top with the ingredients from the 2nd paragraph , or with whatever else you like. Enjoy !

BANANA PANCAKES WITH CAROB SYRUP

Banana Pancakes with Carob Syrup
(1 serving)

1/3 cup wholemeal flour
1/4 tsp baking power
1/4 tsp baking soda
1 tsp maca root powder
1 small mashed banana
1 chia egg /like flax seed one but with chia/
3/8 cup almond milk

PREPARATION :

Mix dry ingredients well in a bowl.Mix wet ingredients in another bowl.Slowly start adding the wet ingredients to the dry ones .
Put a little coconut oil on the frying pan and start pouring pancake mixture.The rest you know ! 😄
I also used 1 more banana for in between the pancakes and around them PLUS the carob syrup of course !
